At first glance these two words seem to indicate the same effect food has on the person enjoying something good to eat. Consumers and the food industry often use these words interchangeably, however they are different. Flavour refers to the smell and to the texture of food, as well as the taste of food. Taste is what takes place in your mouth when food or drink make a connection with your taste buds. These taste receptors recognize the basic tastes of sweet, sour, bitter salty and umami.
Taste is one of the body’s five senses, but it does not include the sense of smell and that is a big part of what makes each flavour unique. Flavour is the fulfilling experience of taste and aroma combining together with the texture of some foods. Aroma plays a significant part of the sensory experience through flavour.
If you are looking to improve your taste and improve balance, depth and fullness in the taste or
to boost certain flavours of a dish/product by adding STA at a dosage of 0.1% to 0.6% of the final weight of the product should do the trick.
Natural flavour enhancers can be costly. However the Scelta Taste Accelerator is used in very low dosages, making it very cost competitive to MSG/AYE and I+G. Also If you wish to keep your product recipe free of artificial ingredients, Scelta STA is a natural product made during the growing and preserving process of white button mushrooms. STA is your natural choice.
Depending on the application, STA can be used as an alternative for MSG/AYE/I+G and sometimes in combination with other natural flavour ingredients thereby replacing artificial enhancing products completely.
The shelf life from date of production of the STA liquid is 3 months cooled, 24 months as supplied frozen. STA powder and STA CC have an ambient shelf life of 24 months.
No, from our experience we’ve seen that the effect of STA still has a good effect on the taste (perception), even after sterilisation.
Our umami ingredients are made from the stems and blanching water of the mushrooms growing and preserving industry. Our liquid version is 100% mushroom material. Our powders are spray dried and only have the addition of a maize based maltodextrin processing aid.
When you add our STA products to various applications it will provide balance and dept. It will have an impact on the total taste system of a product/dish, based on the umami principle.

Glutamate flavouring is a generic name for the flavour-enhancing compounds based on glutamic acid and its salts (glutamates). These compounds provide an umami (savoury) taste to food. There are natural glutamates which occur in its natural form in e.g. tomatoes, fermented soy certain, cheese and of course, mushrooms. You also have highly processed "artificial" glutamate products like MSG.
Scelta Taste Accelerator (STA) does not replace salt. STA works as taste enhancer and therefore increases the perceived saltiness of the salt in the recipe, as a result you are able to reduce salt levels in recipes gradually up to 40%.
Our Scelta Taste Accelerator products work as a natural flavour enhancer. The product is made from mushrooms and contains naturally occurring glutamate and guanylate (‘5-GMP). Because of the taste enhancing effect of these components, the salt content of the product will be enhanced as well. That is why you will need less salt in your final product to keep an acceptable perceived saltiness.
Our STA products do not contain any added potassium and sodium. Mushrooms naturally contain levels of potassium and sodium content.
According to the EU law we can use the following declaration possibilities:
• (natural) mushroom powder
• (natural) mushroom extract
• (natural) mushroom flavour
• And natural flavour.
Note: When you wish to declare the product as using a “natural flavour” if it means that the product doesn’t add any mushroom flavour to the final product. We recommend that you always check any declaration with your countries legislation department, as we can only offer advice.
Our products are made from mushrooms. Our Global Gap accredited mushrooms are grown without any pesticides. However, we cannot fully guarantee that there are no pesticides traces in the straw, gypsum, chicken or horse manures which are used to grow the mushrooms. In the USA our product can be labelled as organic. However, in the EU this is not stated due to the growing medium for the mushrooms. Scelta produce all mushrooms and concentrates in the most natural way.
